Healthy and nutritious combo plate

One of our resolutions for September is to start eating better. Traditionally the combo plate It has had a bad reputation due to the poor quality of its ingredients, the excess of sauces and fats and the use of little recommended preparations such as fried or battered. 

With the invaluable help of our partner, @ chef.killa, we have devised this much healthier version and of course ... delicious! Here are all the steps and ingredients necessary to prepare it:

Ideal for cooking with Terracotta Skillet

Ingredients

  • 1/2 sweet potato 
  • 1/4 onion and 1/4 zucchini 
  • curry, turmeric, paprika and pepper
  • 1/3 of aubergine
  • cherry tomatoes
  • fried or grilled egg
  • sauce: mixing hummus, yogurt, lemon, paprika and oil

Steps (preparation 10 minutes)

- Step 1:

Heat the medium Sweet potato Microwave for 6 minutes at maximum power. If you don't have a microwave, you can put it in the oven at 180 degrees for about 30-40 minutes. This step will lengthen the preparation time of the recipe. Also prepare the eggplant in the same way.

- Step 2:

Prepare a pan with extra virgin olive oil and fry the curry so that it gives off all its flavor. Be careful not to burn! Add the turmeric and peppers and pepper and immediately pour the onion and zucchini. Let them soak in the flavors until they are soft and the onion is transparent. Remove from heat and use the oil to fry the egg (If you don't want the spicy flavor also in the egg, reverse the order of preparation of this step).

- Step 3:

Time to plate this delicious combo dish! Add the cherry tomatoes to add color and garnish with a salsa incredible: mix hummus, yogurt, lemon, pepper and oil and emulsify everything with the help of a fork. Yum!
