Chicken schnitzel with oat batter

by Amercook Spain

We love experimenting with traditional dishes and giving them a spin to make them a little healthier. That is why today we propose this review of the classic Milanese by introducing chicken as the main protein and adding oats al tarnished. You will get a chicken breast with a unique crunchy texture. You can adapt this recipe by substituting whole wheat flour for normal and oatmeal for cereal flakes without sugar. Time to get down to business!

Diners: 1

Ideal for cooking with Terracotta scratched grill

  • 2 chicken breasts
  • 1 cup whole wheat flour
  • 1 Zucchini
  • Carrots 2
  • 1 cebolla
  • Salt, oregano, basil, extra virgin olive oil.

  • Crushed oats to coat to taste

- Step 1:

As always, we prepare all the ingredients ahead of time to speed up the cooking process. We cut the carrots, zucchini and onion Julienne and grind the oats to get a consistency similar to flour. If you don't have a food processor you can use oatmeal or use the whole flakes for a touch crunchy

- Step 2:

We prepare the tarnished mixing the oats and whole wheat flour together with the salt, pepper, oregano and basil (they can be dried or fresh just chopped).

- Step 3:

We flatten the breasts with the help of a kitchen hammer or a canning jar, wrapping them in plastic. film. We tap lightly until their width is less than 1 centimeter, taking care not to break them.

- Step 4:

Sauté the accompanying vegetables and remove them from the grill. We coat the breasts in the breading until it is well fixed in the meat and we go through the fire until they are well browned. It is done! Serve it with the vegetables and enjoy.
