Tomato granita with mozzarella and pesto

We bring you the step by step to make your own tomato granita with mozzarella and pesto. All the flavor of Italy in a summer starter and very, very refreshing. 😊

Ingredients:
💠 400 ml of crushed tomato
💠 ½ teaspoon Worcestershire sauce
💠 ½ teaspoon sugar
💠 ½ teaspoon white pepper
💠 ½ teaspoon salt
💠 70 g of mozzarella pearls
💠 50 g of grated Parmesan
💠 50 g pine nuts
💠 20 g fresh basil
💠 100 ml olive oil
💠 ½ teaspoon salt

TOMATO GRANIZED WITH MOZZARELA AND PESTO


Crafting:

  1. Mix the crushed tomato with the Worcestershire sauce, sugar, pepper and salt. Pour into an ice cube tray and freeze.
  2. For slush Add the freezer tomato cubes in a knife machine and blend. Stir with the spatula and repeat
  3. For salsa pesto add the chopped garlic, the chopped basil, the oil and the salt in the blender. Blend until a slightly grainy sauce is left. Serve the granita in a bowl, decorate with the Mozzarella pearls and some fresh basil leaves and dress with the pesto sauce


Tip: consume immediately or keep the slush in the freezer until serving time. For a more intense flavor, toast the pine nuts in a pan before making the pesto.
