As any Valencian would tell you ... don't even think about touching the rice of a paella during cooking! This way we avoid that the starch separates from the grain and a rice mass is created. 🥘
Also, it is much better to use only water instead of hot, as in the usual recipe. After all, we want rice to be the protagonist. Nor do we want to camouflage it with too many ingredients or very strong spices, better to fall short than to go too far.
And above all, don't ever skip the resting time after preparing it so that the rice is ready and you have a spectacular dish!
